Set off to discover the traditional flavors of Florentine cuisine on this authentic journey through food and culture. Choose from either tripe or the typical Florentine ‘lampredotto’, the most loved and famous dish in Florence. The experience also includes tasting of the ‘peposo del Brunelleschi' (beef cooked in Tuscan red wine and pepper) as well as the ‘stracotto di Guancia’ (beef cooked in tomato sauce and boiled in wine).
A fine glass of wine, beer or soft drink drink will accompany the dishes and you’ll get to discover the history of the last tripe seller family (trippai) of San Frediano, known as the Bambi’s. Over time this historic family has become a reference point for many other tripe sellers as a supplier of raw materials. The strength of the Bambi family lies in their entirely controlled production process, from the producer to the consumer.
